Ingredients
- 4 slices bread (sourdough, Texas toast, or white bread)
- 4–6 slices bacon
- 1 cup shredded cheese (sharp cheddar recommended)
- Optional blend: cheddar + mozzarella or provolone
- ½ cup dill pickle slices, well drained and patted dry
- 2 tablespoons butter, softened
- Optional add-ins:
- 1 tablespoon cream cheese (extra creamy)
- ½ teaspoon garlic powder
- Pinch of black pepper
- Dijon mustard or ranch dressing (thin spread)
Instructions

Cook the Bacon
- Cook bacon in a skillet over medium heat until crispy.
- Drain on paper towels and set aside.

Prep the Pickles
- Pat pickle slices dry thoroughly to avoid soggy sandwiches.

Assemble the Sandwiches
- Butter one side of each bread slice.
- On the unbuttered side:
- Sprinkle a layer of cheese
- Add bacon slices
- Add dill pickle slices
- Optional: small spread of cream cheese or Dijon
- Top with more cheese
- Close sandwich with buttered side facing out.

Grill
- Heat skillet or griddle over medium-low heat.
- Cook sandwiches 3–4 minutes per side, pressing lightly, until bread is golden and cheese is fully melted.

Serve
- Remove from skillet, rest 1 minute, slice, and serve hot.

Extra crispy bread: Sprinkle a little shredded cheese on the outside of bread before grilling
