Dill Pickle Bacon Grilled Cheese

Ingredients

  • 4 slices bread (sourdough, Texas toast, or white bread)
  • 4–6 slices bacon
  • 1 cup shredded cheese (sharp cheddar recommended)
    • Optional blend: cheddar + mozzarella or provolone
  • ½ cup dill pickle slices, well drained and patted dry
  • 2 tablespoons butter, softened
  • Optional add-ins:
    • 1 tablespoon cream cheese (extra creamy)
    • ½ teaspoon garlic powder
    • Pinch of black pepper
    • Dijon mustard or ranch dressing (thin spread)

Instructions

  1. Cook the Bacon
    • Cook bacon in a skillet over medium heat until crispy.
    • Drain on paper towels and set aside.
  2. Prep the Pickles
    • Pat pickle slices dry thoroughly to avoid soggy sandwiches.
  3. Assemble the Sandwiches
    • Butter one side of each bread slice.
    • On the unbuttered side:
      • Sprinkle a layer of cheese
      • Add bacon slices
      • Add dill pickle slices
      • Optional: small spread of cream cheese or Dijon
      • Top with more cheese
    • Close sandwich with buttered side facing out.
  4. Grill
    • Heat skillet or griddle over medium-low heat.
    • Cook sandwiches 3–4 minutes per side, pressing lightly, until bread is golden and cheese is fully melted.
  5. Serve
    • Remove from skillet, rest 1 minute, slice, and serve hot.
