Servings & Timing:

  • Servings: 4
  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Chill Time: 1 hour
  • Total Time: ~1 hour 20 minutes

Ingredients List:

  • 1½ cups heavy cream, divided
  • 6 oz chocolate (about 1 cup chopped or chips)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla bean paste or vanilla extract

Toppings (Optional):

  • Chocolate shavings or curls
  • Raspberries or strawberries
  • Candied nuts

Instructions:

  1. Melt the Chocolate
In a microwave-safe bowl, heat ½ cup of the heavy cream for about 1 minute until hot.
Stir in the chocolate until combined, then let the mixture sit for 5 minutes so the chocolate melts fully.
  2. Cool the Mixture
Whisk the chocolate and cream until smooth. Set aside to cool slightly while you prepare the whipped cream.
  3. Whip the Cream
In a medium bowl, whip the remaining 1 cup of cold heavy cream until soft peaks form.
Scoop out ½ cup of the whipped cream, cover, and refrigerate (this will be used for topping).
Continue whipping the remaining cream until stiff peaks form.
  4. Fold Together
Gently fold the whipped cream into the cooled chocolate mixture in three batches using a spatula.
Don’t overmix—small streaks are perfectly fine.
Fold in powdered sugar and vanilla.
  5. Chill & Serve
Divide the mousse evenly into 4 ramekins or glasses.
Refrigerate for at least 1 hour (up to 4 hours).
Serve topped with the reserved whipped cream and your favorite toppings.

Additional Notes:

  • Chocolate Choice: Chocolate bars melt smoother, while chips are more convenient
  • Flavor Boost: Use dark chocolate for a richer, less sweet mousse
  • Make-Ahead Friendly: Can be prepared several hours in advance
  • Texture Tip: Let the chocolate mixture cool slightly before folding to keep the mousse light
