Ingredients:
Filling:
- 2 cups cooked chicken
- 1 cup frozen mixed vegetables
- 1/3 cup diced onion
- 2 tbsp butter
- 1/3 cup flour
- 1 ¾ cup chicken broth
- ½ cup milk
- Salt & pepper to taste
Crust:
- 1 can refrigerated biscuit dough
- Nonstick cooking spray
Instructions:
- Preheat oven to 375°F.
- In a saucepan, melt butter and sauté onions until soft.
- Stir in flour to make a roux. Cook 1 min.
- Slowly whisk in chicken broth and milk. Cook until thickened.
- Stir in chicken and mixed vegetables. Season to taste.
- Spray muffin tin. Press biscuit dough into cups.
- Spoon filling into dough cups.
- Bake 15–18 min or until golden brown.
- Cool slightly before removing from tin.
