🛒 Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 (15 oz) cans chili beans
- 1 (15 oz) can tomato sauce
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 1 cup water
- 2–3 tbsp taco seasoning (store-bought or homemade)
- Salt & pepper, to taste
🧀 Optional toppings: shredded cheese, sour cream, crushed tortilla chips, chopped cilantro
👩🍳 Instructions
- Brown the Beef:
In a skillet over medium heat, brown the ground beef. Add the diced onion and cook until fragrant and soft, about 3–4 minutes. - Season:
Stir in 1 tbsp of taco seasoning, mix well to coat the meat and onions evenly. - Transfer to Crockpot:
Add the seasoned beef mixture to your slow cooker. - Add Remaining Ingredients:
Pour in the chili beans (do not drain), tomato sauce, Rotel, water, and the rest of the taco seasoning. - Cook:
- High for 4 hours
- Low for 6–8 hours
- Finish & Serve:
Taste and adjust salt and pepper if needed.
Serve hot with shredded cheese, sour cream, or any favorite taco toppings!
💡 Tips
- Want it thicker? Use less water or add some crushed tortilla chips to simmer down.
- Spice level too low? Add a dash of hot sauce or more taco seasoning.
- Freezes beautifully! Let cool and store in airtight containers.
