🛒 Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 (15 oz) cans chili beans
  • 1 (15 oz) can tomato sauce
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 cup water
  • 2–3 tbsp taco seasoning (store-bought or homemade)
  • Salt & pepper, to taste

🧀 Optional toppings: shredded cheese, sour cream, crushed tortilla chips, chopped cilantro


👩‍🍳 Instructions

  1. Brown the Beef:
    In a skillet over medium heat, brown the ground beef. Add the diced onion and cook until fragrant and soft, about 3–4 minutes.
  2. Season:
    Stir in 1 tbsp of taco seasoning, mix well to coat the meat and onions evenly.
  3. Transfer to Crockpot:
    Add the seasoned beef mixture to your slow cooker.
  4. Add Remaining Ingredients:
    Pour in the chili beans (do not drain), tomato sauce, Rotel, water, and the rest of the taco seasoning.
  5. Cook:
    • High for 4 hours
    • Low for 6–8 hours
  6. Finish & Serve:
    Taste and adjust salt and pepper if needed.
    Serve hot with shredded cheese, sour cream, or any favorite taco toppings!

💡 Tips

  • Want it thicker? Use less water or add some crushed tortilla chips to simmer down.
  • Spice level too low? Add a dash of hot sauce or more taco seasoning.
  • Freezes beautifully! Let cool and store in airtight containers.
