Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 packet (1 oz) fajita seasoning mix
- 1 tbsp olive oil
- 1 red bell pepper, thinly sliced

- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 cup shredded cheddar or Mexican-blend cheese
- ½ cup sour cream or Greek yogurt

Preheat Oven
- Preheat to 375°F (190°C).
- Lightly grease a baking dish.

Season Chicken
- In a bowl, toss chicken with olive oil and fajita seasoning until evenly coated.

Assemble
- Spread chicken evenly in the baking dish.
- Top with sliced bell pepper (and onion if using).

- Cover with foil and bake 25 minutes.

- Remove foil, sprinkle with cheese.
- Bake uncovered 10 minutes more until bubbly and chicken is cooked through.
