Festive Broccoli Salad with Honeycrisp Apples, Cranberries, Pecans & Pomegranate Jewels

Ingredients:
4 cups fresh broccoli florets, finely chopped
2 Honeycrisp apples, diced
½ cup dried cranberries
½ cup chopped pecans
¼ cup finely diced red onion
½ cup shredded sharp cheddar (optional)
½ cup pomegranate seeds
Dressing:
â…“ cup apple cider vinegar
3 tbsp honey
½ cup mayonnaise or Greek yogurt
1 tbsp Dijon mustard
Salt & pepper to taste
Directions:
In a large bowl, combine broccoli, diced Honeycrisp apples, dried cranberries, pecans, red onion, and cheddar (if using).
In a separate small bowl, whisk together apple cider vinegar, honey, mayo or Greek yogurt, Dijon mustard, salt, and pepper until smooth.
Pour the dressing over the salad mixture and toss gently to coat.
Fold in pomegranate seeds, reserving a few for garnish.
Chill for at least 30 minutes before serving to let the flavors develop.
