Ingredients:
- 4 medium sweet apples (Fuji, Honeycrisp, or Gala), peeled and chopped
- 4 large eggs
- 5 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- Olive oil (for greasing the pan)
Instructions:
- Preheat oven to 350ยฐF (175ยฐC). Grease an 8-inch round or square baking pan with olive oil.
- Prepare the apples: Peel, core, and chop the apples into small pieces. Place them in a blender or food processor.
- Blend the batter: Add eggs, cocoa powder, and baking powder to the apples. Blend until smooth. The mixture will be thick and slightly frothy.
- Pour into pan: Transfer the batter to the greased baking pan. Smooth the top with a spatula.
- Bake: Place in the preheated oven for 25โ30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & serve: Let the cake cool slightly in the pan, then slice and serve. It can be enjoyed warm or at room temperature.
Tips:
- For extra texture, you can leave small apple chunks in the batter instead of fully blending.
- Optional: Sprinkle a tiny bit of cinnamon or a few chopped nuts on top before baking.
