Cook Time: 1 minute
Total Time: ~6 minutes
Ingredients
Main Ingredients
- 3 large eggs
- 1 cup (240 ml) milk
Fiber & Structure
- 2 tbsp flax seeds
- 2 tbsp psyllium husk
Instructions
-
Beat the eggs
Crack the eggs into a bowl and whisk until fully blended. Light and frothy works best. -
Add the milk
Pour in the milk and whisk again until smooth and uniform. -
Mix in seeds
Add flax seeds and psyllium husk. Stir gently so everything is evenly distributed. -
Let it thicken
Rest the mixture for 3โ5 minutes. It will thicken into a batter-like consistency as the fiber absorbs liquid. -
Microwave
Pour the batter into a microwave-safe glass jar or mug, filling only halfway.
Microwave on high for 1 minute. Add 10โ15 seconds if needed, depending on your microwave. -
Cool & serve
Let cool for 1โ2 minutes. Eat straight from the jar or remove and slice for toast-style servings.
Additional Notes
- Why It Works: Eggs provide structure, while psyllium and flax replace flour completely.
- Texture Tip: Letting the batter rest is keyโdonโt skip it.
- Flavor Boost: Add a pinch of salt, garlic powder, or everything-bagel seasoning if you like savory bread.
Storage & Meal Prep
- Best eaten fresh.
- You can refrigerate for up to 24 hours, but texture is best right after cooking.
