Bright citrus meets nutty richness in this moist, gluten-free delight!
2 medium oranges (seedless, thin-skinned)
4 large eggs
1 cup coconut sugar or erythritol
2 cups ground pistachios (unsalted, finely ground)
1 tsp baking powder
½ tsp cardamom (optional)
Pinch of salt
Instructions:
Step 1: Cook the Oranges
Boil whole oranges in water for 40 min until soft. Cool, cut, and remove any seeds. Blend into a smooth purée (peel included).
Step 2: Mix the Batter
Preheat oven to 350°F (175°C).
In a bowl, beat eggs and sugar until fluffy. Fold in orange purée, ground pistachios, baking powder, cardamom, and salt.
Step 3: Bake
Pour into a greased 8-inch cake pan.
Bake 35–40 min until golden and set. Cool in pan.
Step 4: Serve
Dust with powdered sweetener or garnish with crushed pistachios. Lovely with tea!
