Fluffy Cloud Bread

gggggggggrrr Recipe

This Fluffy Cloud Bread is light, airy, and pillowy soft—made with just three simple ingredients. Naturally low-carb and high in protein, it’s perfect for breakfast, snacks, or as a sandwich base when you want something bread-like without the heaviness.

Servings & Timing:

  • Yield: 6 pieces
  • Prep Time: 10 minutes
  • Bake Time: 25–30 minutes
  • Total Time: ~35–40 minutes

Ingredients List:

  • 3 large eggs, separated (room temperature preferred)
  • 3 tablespoons cream cheese, softened
  • ¼ teaspoon baking powder

Instructions:

  1. Preheat & Prep
Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate Eggs
Carefully separate the eggs, placing whites in a clean, dry bowl and yolks in another. Make sure no yolk gets into the whites.
  3. Whip Egg Whites
Beat egg whites on medium speed until soft peaks form (about 2–3 minutes). Gradually add baking powder and continue beating until stiff peaks form.
  4. Mix Yolks
In a separate bowl, mix egg yolks with softened cream cheese until smooth and creamy.
  5. Fold Gently
Gently fold the whipped egg whites into the yolk mixture in batches using a spatula. Fold slowly to keep as much air as possible.
  6. Shape
Spoon 6 rounds of batter onto the prepared baking sheet, spacing them about 2 inches apart. Lightly shape if needed.
  7. Bake
Bake for 25–30 minutes, until golden on top and springy to the touch. Avoid opening the oven too early.
  8. Cool & Serve
Let cool on the baking sheet for 10 minutes, then transfer to a wire rack.

Additional Notes:

  • Best Texture: Use room-temperature eggs
  • Don’t Overwhip: Stiff but not dry peaks work best
  • Dairy-Free Option: Use a smooth dairy-free cream cheese alternative (texture may vary)
  • Storage: Store refrigerated up to 3 days
