Total Time:

4 hours 10 minutes (or overnight)

Ingredients:

  • 1 cup fresh kiwi, peeled and sliced
  • 1 cup fresh mandarin oranges, peeled and segmented
  • 1 cup fresh banana, sliced
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh pineapple, diced
  • 2 cups Greek yogurt (unsweetened, plain or flavored for extra sweetness)
  • 1/4 cup honey (optional, or use a sweetener of your choice)
  • 1 tablespoon lemon juice (to prevent the fruit from browning)
  • 1/2 cup coconut flakes (optional topping)

Instructions:

Step 1: Prepare the Fruit

  1. Wash and peel all the fruits. Slice the bananas, peel and segment the mandarin oranges, dice the pineapple, hull and slice the strawberries, and peel and slice the kiwi.
  2. Toss the fruit in a large bowl with the lemon juice to prevent browning and to add a little extra zing to the flavor.

Step 2: Mix the Yogurt

  1. In a separate bowl, combine the Greek yogurt and honey (or sweetener) and stir until smooth and well combined. If you want a sweeter flavor, feel free to add more sweetener to taste.

Step 3: Layer the Dessert

  1. In a shallow 9×13-inch dish or a loaf pan, arrange the fruits in an even layer. You can either layer them by type of fruit or mix them all together—either way, it will look beautiful.
  2. Pour the yogurt mixture over the fruit, spreading it evenly with a spatula to cover all the fruit completely. Make sure the yogurt seeps between the pieces of fruit.
  3. Optional: Sprinkle the coconut flakes on top for added texture and flavor.

Step 4: Freeze

  1. Cover the pan with plastic wrap or foil, then place it in the freezer.
  2. Freeze for at least 4 hours or overnight until the dessert has solidified into a frozen treat.

Step 5: Serve

  1. Once frozen, remove from the freezer and let it sit for a couple of minutes before slicing for easier serving.
  2. Slice into squares or bars and serve immediately for a refreshing, creamy treat!
