Total Time:
4 hours 10 minutes (or overnight)
Ingredients:
- 1 cup fresh kiwi, peeled and sliced
- 1 cup fresh mandarin oranges, peeled and segmented
- 1 cup fresh banana, sliced
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh pineapple, diced
- 2 cups Greek yogurt (unsweetened, plain or flavored for extra sweetness)
- 1/4 cup honey (optional, or use a sweetener of your choice)
- 1 tablespoon lemon juice (to prevent the fruit from browning)
- 1/2 cup coconut flakes (optional topping)
Instructions:
Step 1: Prepare the Fruit
- Wash and peel all the fruits. Slice the bananas, peel and segment the mandarin oranges, dice the pineapple, hull and slice the strawberries, and peel and slice the kiwi.
- Toss the fruit in a large bowl with the lemon juice to prevent browning and to add a little extra zing to the flavor.
Step 2: Mix the Yogurt
- In a separate bowl, combine the Greek yogurt and honey (or sweetener) and stir until smooth and well combined. If you want a sweeter flavor, feel free to add more sweetener to taste.
Step 3: Layer the Dessert
- In a shallow 9×13-inch dish or a loaf pan, arrange the fruits in an even layer. You can either layer them by type of fruit or mix them all together—either way, it will look beautiful.
- Pour the yogurt mixture over the fruit, spreading it evenly with a spatula to cover all the fruit completely. Make sure the yogurt seeps between the pieces of fruit.
- Optional: Sprinkle the coconut flakes on top for added texture and flavor.
Step 4: Freeze
- Cover the pan with plastic wrap or foil, then place it in the freezer.
- Freeze for at least 4 hours or overnight until the dessert has solidified into a frozen treat.
Step 5: Serve
- Once frozen, remove from the freezer and let it sit for a couple of minutes before slicing for easier serving.
- Slice into squares or bars and serve immediately for a refreshing, creamy treat!
