Crust Ingredients:
1 cup blended cottage cheese
2 eggs
½ cup almond flour
¼ tsp garlic powder
Pinch of salt
Topping Ingredients:
½ cup ricotta or cottage cheese
1 cup fresh spinach (sautéed or steamed)
2 cloves garlic, minced
½ cup shredded mozzarella
Optional: pinch of red pepper flakes or Italian herbs
Instructions:
Step 1: Make the Crust
Preheat oven to 375°F (190°C).
Mix crust ingredients until smooth.
Spread into a thin round on a parchment-lined baking sheet.
Bake 20–25 mins until set and lightly golden.
