Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, sliced
  • 1 tsp oregano

  • ½ tsp paprika
  • Salt & pepper, to taste
  • ¼ cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook Beef – Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it apart with a spatula. Cook until browned and no longer pink. Drain excess fat if needed.
  2. Add Aromatics – Stir in diced onion and minced garlic. Cook 2–3 minutes until fragrant.
  3. Sauté Veggies – Add bell pepper, zucchini, and cherry tomatoes. Cook 4–5 minutes, stirring often, until veggies soften.
  4. Season – Stir in oregano, cumin, paprika, salt, and pepper. Mix well so the beef and veggies are evenly coated.
  5. Finish & Serve – Remove from heat. Stir in sliced olives and sprinkle with feta cheese. Garnish with parsley before serving.
