Healthy Shepherd’s Pie
Wholesome Shepherd’s Pie with a Cauliflower Mash Topping
Ingredients:
1 lb ground turkey or lean beef
1 onion, chopped
2 cloves garlic, minced
2 carrots, diced
1 cup green peas (fresh or frozen)
1 cup corn (fresh or frozen)
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 head of cauliflower, chopped into florets
1/4 cup milk (or dairy-free alternative)
2 tablespoons butter (or olive oil for a dairy-free option)
Directions:
Preheat oven to 400°F (200°C).
In a large skillet over medium heat, cook the ground turkey or beef until browned. Drain excess fat if necessary.
Add the chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until the onion is translucent.
Stir in the diced carrots, green peas, corn, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
While the meat mixture is cooking, steam the cauliflower florets until tender, about 10-12 minutes. Drain and transfer to a mixing bowl.
Add the milk and butter to the steamed cauliflower and mash until smooth. Season with salt and pepper to taste.
Spread the meat and vegetable mixture evenly in a baking dish. Top with the cauliflower mash, smoothing it out with a spatula.
Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and the filling is bubbling.
