  • 2 cups cooked shredded chicken breast
  • ½ cup non-fat Greek yogurt
  • ½ cup low-fat cottage cheese (blend smooth)

Cheese Layer

  • 1½ cups shredded Mexican-blend or cheddar cheese
  • ½ cup mozzarella cheese

Flavor Boosters

  • ½ cup red enchilada sauce or salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt & black pepper, to taste

Optional (still high-protein)

  • ¼ cup diced jalapeños
  • 2 tbsp chopped green onions
  • 2 tbsp light cream cheese (for extra creaminess)

👩‍🍳 Instructions

1️⃣ Make the Creamy Protein Base

In a bowl, mix:

  • Greek yogurt
  • Blended cottage cheese
  • Enchilada sauce
  • Seasonings

Stir until smooth.


2️⃣ Build the Skillet

Heat a non-stick or cast-iron skillet over medium heat.

  • Add shredded chicken
