Ingredients List

Truffle Base

  • 1 cup vanilla or chocolate protein powder (whey or whey–casein blend works best)
  • ½ cup unsweetened cocoa powder
  • ½ cup Greek yogurt (0% or 2%)
  • ¼ cup nut butter (peanut, almond, or cashew)
  • 3 tbsp maple syrup or sugar-free syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 2–3 tbsp milk for texture adjustment

Chocolate Coating

  • 1½ cups sugar-free chocolate chips or dark chocolate chips
  • 1 tsp coconut oil (for smoother coating)

Instructions

Step 1 — Mix the Truffle Dough

  1. In a bowl, combine protein powder, cocoa powder, and salt.
  2. Add Greek yogurt, nut butter, vanilla, and syrup.
  3. Stir until a thick dough forms.
  4. If too dry, add 1 tbsp milk at a time.
  5. Chill the dough for 10 minutes for easier rolling.

Step 2 — Roll the Truffles

  1. Scoop small portions and roll into smooth balls.
  2. Place on a parchment-lined tray.

Step 3 — Melt the Chocolate

  1. Microwave chocolate chips + coconut oil in 20-second intervals, stirring until smooth.
  2. Do not overheat — the coating should be silky and pourable.

Step 4 — Dip & Chill

  1. Dip each ball into melted chocolate.
  2. Place in mini cupcake liners or on a tray.
  3. Refrigerate for 10–15 minutes until the chocolate shell hardens.
