Instructions

  1. Prepare your pan

  2. Blend the wet ingredients
    Add cottage cheese, eggs, Greek yogurt, melted butter, sweetener, and vanilla into a blender. Blend until smooth and creamy.
  3. Mix the dry ingredients
    In a large bowl, whisk oat flour, protein powder, baking powder, baking soda, and salt.
  4. Combine
    Pour the blended wet mixture into the dry mixture. Stir gently until fully combined (do not overmix).
  5. Pour batter into pan
    Spread the batter evenly.
  6. Make the cinnamon swirl
    Mix melted butter, cinnamon, and brown sweetener. Drizzle over the top of the batter.
    Use a knife to gently swirl into the batter (don’t overmix — you want the swirl design on top).
  7. Bake
