High-Protein Cottage Cheese Cinnamon Roll Bread

Swirled with cinnamon, soft, and secretly protein-packed—your new favorite breakfast loaf!

Ingredients:

Bread Base:

1 cup blended cottage cheese

2 large eggs

1 cup almond flour

1 scoop vanilla protein powder (about 30g)

1 tsp baking powder

½ tsp vanilla extract

Pinch of salt

Cinnamon Swirl:

1 tbsp cinnamon

2 tbsp keto sweetener or honey

1 tbsp melted butter

Instructions:

Step 1: Make the Batter

Preheat oven to 350°F (175°C).

Mix cottage cheese, eggs, vanilla, almond flour, protein powder, baking powder, and salt until smooth.

Step 2: Swirl & Bake

Pour half the batter into a greased loaf pan.

Drizzle half the cinnamon swirl, then repeat layers. Swirl gently with a knife.

Step 3: Bake It

Bake 30–35 mins until golden and toothpick comes out clean.

Cool before slicing—drizzle with Greek yogurt or icing if you like!
