Creamy Enchilada Sauce

  • 2 tablespoons butter
  • 2 tablespoons flour (or almond flour for low-carb)
  • 1 ยฝ cups unsweetened protein milk (Fairlife recommended)
  • ยฝ cup chicken broth
  • ยผ cup Greek yogurt
  • 1 cup shredded cheese (Monterey Jack or mozzarella)
  • 1 small can (4 oz) mild green chiles
  • Salt & pepper to taste

Assembly

  • 6โ€“8 medium tortillas (low-carb, high-protein, or regular flour)
  • 1 ยฝ cups shredded cheese for topping
  • Fresh cilantro for garnish

Instructions

1. Make the Chicken Filling

  1. In a large bowl, mix shredded chicken with blended cottage cheese, Greek yogurt, 1 cup shredded cheese, garlic powder, onion powder, paprika, salt, and pepper.
  2. Stir until creamy and well combined. Set aside.

2. Prepare the Creamy Sauce

  1. Melt butter in a pan over medium heat.
  2. Whisk in flour and cook for 30 seconds.
  3. Slowly add protein milk and chicken broth while whisking to avoid lumps.
  4. Let it simmer until slightly thickened.
  5. Add Greek yogurt, shredded cheese, green chiles, salt, and pepper.
  6. Stir until smooth and creamy.

3. Assemble the Enchiladas

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Spread a thin layer of sauce on the bottom of a baking dish.
  3. Fill each tortilla with 2โ€“3 spoonfuls of chicken mixture.
  4. Roll tightly and place seam-side down in the baking dish.
  5. Pour remaining sauce over the top.
  6. Sprinkle generously with shredded cheese.

4. Bake

  • Bake uncovered for 20โ€“25 minutes, until bubbly and golden.
  • Let rest 5 minutes before serving.

  • Using protein milk + cottage cheese increases protein while keeping the sauce ultra-creamy.
