Creamy Enchilada Sauce
- 2 tablespoons butter
- 2 tablespoons flour (or almond flour for low-carb)
- 1 ยฝ cups unsweetened protein milk (Fairlife recommended)
- ยฝ cup chicken broth
- ยผ cup Greek yogurt
- 1 cup shredded cheese (Monterey Jack or mozzarella)
- 1 small can (4 oz) mild green chiles
- Salt & pepper to taste

- 6โ8 medium tortillas (low-carb, high-protein, or regular flour)

Instructions
1. Make the Chicken Filling
- In a large bowl, mix shredded chicken with blended cottage cheese, Greek yogurt, 1 cup shredded cheese, garlic powder, onion powder, paprika, salt, and pepper.
- Stir until creamy and well combined. Set aside.
2. Prepare the Creamy Sauce
- Melt butter in a pan over medium heat.
- Whisk in flour and cook for 30 seconds.
- Slowly add protein milk and chicken broth while whisking to avoid lumps.
- Let it simmer until slightly thickened.
- Add Greek yogurt, shredded cheese, green chiles, salt, and pepper.
- Stir until smooth and creamy.
3. Assemble the Enchiladas
- Preheat oven to 375ยฐF (190ยฐC).
- Spread a thin layer of sauce on the bottom of a baking dish.
- Fill each tortilla with 2โ3 spoonfuls of chicken mixture.
- Roll tightly and place seam-side down in the baking dish.
- Pour remaining sauce over the top.
- Sprinkle generously with shredded cheese.
4. Bake
