Instructions (Oven Method)
1. Preheat Oven
Preheat oven to 325ยฐF (165ยฐC).
2. Season the Roast
Pat roast dry and season generously with salt and black pepper on both sides.
3. Sear the Meat
Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
Sear the roast for 3โ4 minutes per side until deeply browned. Remove and set aside.
4. Cook Aromatics
In the same pot, add diced onion and cook 3โ4 minutes until softened.
Add garlic and cook 30 seconds until fragrant.
5. Deglaze
Pour in red wine (if using) and scrape up browned bits from the bottom. Simmer 2 minutes.
Add beef broth.
6. Braise
Return roast to the pot. Cover tightly with lid or foil.
Transfer to oven and cook 3โ3ยฝ hours, until fork-tender.
7. Rest & Serve
Let rest 10 minutes, then slice or shred.
