614601413 122166035000765534 8642386579788677760 n Recipe

A creamy, lightly set bake that works beautifully for breakfast, snacks, or dessert—and kids love it too!

⭐ Ingredients

  • 2 cups full-fat cottage cheese
  • 3 large eggs
  • ½ cup almond flour
  • ¼ cup honey or maple syrup
    (or sugar-free alternative, to taste)
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 tsp baking powder
  • 2 cups mixed berries (fresh or frozen)

🔥 Instructions

  1. Preheat oven to 180°C / 350°F. Grease or line an 8×8-inch (20×20 cm) baking dish.
  2. In a blender or food processor, blend cottage cheese and eggs until smooth and creamy.
(This step gives that cheesecake-like texture.)
  3. Add almond flour, honey/maple syrup, vanilla, lemon zest, and baking powder. Blend again until well combined.
  4. Gently fold in the berries (if frozen, do not thaw).
  5. Pour mixture into the prepared dish and smooth the top.
  6. Bake 35–40 minutes, until the center is just set and the top is lightly golden.
  7. Cool for 10–15 minutes before slicing.

🍽️ How to Serve

  • Warm with a spoon of Greek yogurt
  • Drizzle with extra honey

  • Serve chilled for a firmer, snack-style slice

💡 Tips & Variations

  • For extra protein: add 1–2 tbsp vanilla protein powder
