🛒 Ingredients

  • 1 large fresh cucumber (thinly sliced)
  • 8 slices soft white or whole-wheat bread (crusts removed if desired)
  • 4 oz (½ cup) cream cheese, softened
  • 2 tablespoons butter, softened
  • 1–2 tablespoons mayonnaise (optional, for extra creaminess)
  • 1 tablespoon fresh dill or parsley, finely chopped
  • Salt and black pepper, to taste
  • A squeeze of lemon juice (optional)

👩‍🍳 Instructions

  1. Prepare the cucumbers
    • Slice cucumbers very thin.
    • Lightly sprinkle with salt and let sit for 10 minutes.
    • Pat dry with paper towels (this keeps sandwiches from getting soggy).
  2. Make the spread
    • In a bowl, mix cream cheese, butter, mayonnaise (if using), herbs, a pinch of salt, pepper, and a few drops of lemon juice.
    • Stir until smooth and creamy.
  3. Assemble
    • Spread a generous layer of the cream cheese mixture on each slice of bread.
    • Arrange cucumber slices evenly over half of the bread slices.
    • Top with remaining slices, spread side down.
  4. Cut & Serve
    • Cut into triangles or finger sandwiches.
    • Serve immediately, or chill for 20–30 minutes before serving.
