🛒 Ingredients
- 1 large fresh cucumber (thinly sliced)
- 8 slices soft white or whole-wheat bread (crusts removed if desired)
- 4 oz (½ cup) cream cheese, softened
- 2 tablespoons butter, softened
- 1–2 tablespoons mayonnaise (optional, for extra creaminess)
- 1 tablespoon fresh dill or parsley, finely chopped
- Salt and black pepper, to taste
- A squeeze of lemon juice (optional)

Prepare the cucumbers
- Slice cucumbers very thin.
- Lightly sprinkle with salt and let sit for 10 minutes.
- Pat dry with paper towels (this keeps sandwiches from getting soggy).

Make the spread
- In a bowl, mix cream cheese, butter, mayonnaise (if using), herbs, a pinch of salt, pepper, and a few drops of lemon juice.
- Stir until smooth and creamy.

Assemble
- Spread a generous layer of the cream cheese mixture on each slice of bread.
- Arrange cucumber slices evenly over half of the bread slices.
- Top with remaining slices, spread side down.

- Cut into triangles or finger sandwiches.
- Serve immediately, or chill for 20–30 minutes before serving.
🌿 Optional Variations
- Add thinly sliced radishes for extra crunch.
- Use Greek yogurt instead of mayonnaise for a lighter version.
