Ingredients
- 2 large eggs
- 2–3 tablespoons crumbled feta cheese
- 1–2 teaspoons olive oil (or spray)
- Pinch of red pepper flakes (optional)
- Black pepper, to taste
- Fresh herbs (optional: parsley, dill, basil)
- Optional toppings:
- Cherry tomatoes
- Hot honey
- Avocado
- Pesto
- Sliced scallions
Instructions

Heat the pan
Add olive oil to a skillet over medium heat.
If using cooking spray, lightly coat the pan.

Add the feta
Sprinkle the crumbled feta into the hot pan.
Let it sizzle for 20–30 seconds until it softens and begins to melt slightly.

Add the eggs
Crack the eggs directly on top of the feta.
Let them settle into the cheese.

Season
Add black pepper and red pepper flakes if you like a little heat.

Cook
Continue frying until the whites are set and the edges get crispy.
For runny yolks: 2½–3 minutes.
For firm yolks: 4–5 minutes.

Serve
Slide the eggs onto a plate.
Add fresh herbs or any optional toppings you like.
