With their perfect balance of textures and flavors, theyโ€™re an irresistible indulgence for any occasion. Plus, theyโ€™re easy to make, making them a fantastic gift or a treat to enjoy at home.

Servings:

Approx. 12-15 pieces (depending on size)

Total Time:

15-20 minutes (plus cooling time)

Ingredients:

  • 12 ounces soft caramels (store-bought or homemade)
  • 6 ounces pecans (halves, toasted)
  • 8 ounces semi-sweet chocolate (chips or chopped)

Instructions:

Step 1: Toast the Pecans

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Spread the pecan halves on a baking sheet in an even layer.
  3. Toast the pecans in the preheated oven for about 5-7 minutes, or until fragrant and lightly golden. Keep a close eye on them to avoid burning. Once done, remove from the oven and set aside to cool.

Step 2: Melt the Caramel

  1. In a saucepan over low heat, melt the soft caramels. Stir constantly to prevent burning. You can add a small splash of water or cream if the caramel is too thick.
  2. Once the caramel is fully melted and smooth, remove from the heat and set aside to cool slightly.

Step 3: Prepare the Chocolate Coating

  1. In a microwave-safe bowl or using a double boiler, melt the semi-sweet chocolate. If using a microwave, heat in 30-second intervals, stirring between each until the chocolate is fully melted and smooth.

Step 4: Assemble the Turtle Candies

  1. Line a baking sheet with parchment paper or wax paper to prevent sticking.
  2. Place a toasted pecan in the center of each spot on the baking sheet.
  3. Spoon a small amount of melted caramel onto the pecan, making sure it covers the nut.
  4. Drizzle or spoon the melted chocolate over the caramel, making sure it covers the entire caramel-pecan cluster.
  5. Repeat with the remaining pecans, caramel, and chocolate.

Step 5: Let Them Cool

  1. Allow the candies to cool completely at room temperature. If youโ€™re in a hurry, you can place them in the refrigerator for 10-15 minutes to speed up the cooling process.
  2. Once the chocolate has set, your Homemade Turtle Candies are ready to enjoy!

Storage Tips:

  • Store the candies in an airtight container at room temperature for up to 1 week.
  • You can also freeze the candies for up to 3 months. Simply place them in an airtight container with parchment paper between layers to prevent them from sticking.
