For the Meatballs:
- 1 lb (450 g) ground beef, turkey, or chicken
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp honey
- ½ tsp black pepper
- ¼ cup breadcrumbs or panko (optional for binding)
- 1 egg
For the Rice Bake:
- 1 cup uncooked rice (white, brown, or jasmine)
- 2 cups chicken or vegetable broth
- 1 cup water
- 1 cup frozen or fresh vegetables (peas, carrots, bell peppers, or mix)
- 2 tbsp soy sauce
- 1 tbsp honey
- Optional: green onions or sesame seeds for garnish
👩🍳 Directions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Make the meatballs: In a bowl, combine ground meat, minced garlic, soy sauce, honey, egg, breadcrumbs (if using), and pepper. Mix until just combined. Roll into 1–1½ inch meatballs and set aside.
- Prepare the rice bake: In the greased baking dish, combine uncooked rice, broth, water, vegetables, 2 tbsp soy sauce, and 1 tbsp honey. Stir to mix well.
- Assemble: Gently place meatballs on top of the rice mixture. Cover tightly with foil.
- Bake: 45–50 minutes, until rice is tender and meatballs are cooked through. Remove foil for the last 10 minutes to lightly brown meatballs if desired.
- Serve: Garnish with chopped green onions or sesame seeds. Enjoy hot!
