🍯 Honey Garlic Meatball Rice Bake

🥩 Ingredients (Serves 4–6)

For the Meatballs:

  • 1 lb (450 g) ground beef, turkey, or chicken
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp black pepper
  • ¼ cup breadcrumbs or panko (optional for binding)
  • 1 egg

For the Rice Bake:

  • 1 cup uncooked rice (white, brown, or jasmine)
  • 2 cups chicken or vegetable broth
  • 1 cup water
  • 1 cup frozen or fresh vegetables (peas, carrots, bell peppers, or mix)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • Optional: green onions or sesame seeds for garnish

👩‍🍳 Directions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Make the meatballs: In a bowl, combine ground meat, minced garlic, soy sauce, honey, egg, breadcrumbs (if using), and pepper. Mix until just combined. Roll into 1–1½ inch meatballs and set aside.
  3. Prepare the rice bake: In the greased baking dish, combine uncooked rice, broth, water, vegetables, 2 tbsp soy sauce, and 1 tbsp honey. Stir to mix well.
  4. Assemble: Gently place meatballs on top of the rice mixture. Cover tightly with foil.
  5. Bake: 45–50 minutes, until rice is tender and meatballs are cooked through. Remove foil for the last 10 minutes to lightly brown meatballs if desired.
  6. Serve: Garnish with chopped green onions or sesame seeds. Enjoy hot!

💡 Tips:

  • For a lower-carb version, swap rice for cauliflower rice (adjust bake time accordingly).
  • You can add extra vegetables like broccoli or zucchini for more nutrition.
  • Leftovers store well in the fridge for 2–3 days and reheat beautifully.
