Instructions

Preheat the oven
Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray. -
Season the zucchini
Place sliced zucchini in a large bowl. Add minced garlic, olive oil, salt, and pepper. Toss well so everything is evenly coated. -
Layer the zucchini
Spread the seasoned zucchini slices evenly in the prepared baking dish. -
Add cheese & breadcrumbs
Sprinkle shredded cheddar and grated Parmesan evenly over the zucchini.
Finish by spreading the breadcrumbs on top for a crispy topping. -
Bake
Bake for 25–30 minutes, until the zucchini is tender and the top is golden brown and crispy. -
Rest & serve
Let it cool for a few minutes before serving. Scoop and enjoy warm.
