Ingredients

Chicken Cutlets

  • 4 thin-sliced chicken breasts or cutlets
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt & pepper, to taste

Tomato Basil Sauce

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • Salt & black pepper, to taste

Creamy Burrata Finish

  • 1 burrata ball (about 4 oz), gently torn
  • Drizzle of extra virgin olive oil
  • Fresh basil, for garnish

Instructions

1. Prepare the Chicken Cutlets

  1. Lightly season chicken on both sides with salt and pepper.
  2. Dredge each piece in flour, shaking off excess.
  3. Dip into beaten eggs.
  4. Coat with breadcrumbs mixed with Parmesan.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook chicken 3–4 minutes per side, until golden, crisp, and cooked through.
  7. Transfer to a plate and keep warm.

2. Make the Tomato Basil Sauce

  1. In the same skillet, add 1 tbsp olive oil.
  2. Sauté minced garlic for 30 seconds until fragrant.
  3. Add cherry tomatoes and red pepper flakes.
  4. Cook 5–7 minutes, stirring, until tomatoes break down and release juices.
  5. Stir in fresh basil, salt, and pepper.
  6. Simmer 1–2 minutes until slightly thickened.

3. Assemble the Dish

  1. Nestle the crispy chicken cutlets directly on top of the tomato sauce.
  2. Spoon some of the tomato mixture over each cutlet.
  3. Tear burrata over the warm chicken so it melts slightly.
  4. Finish with a drizzle of extra virgin olive oil and more fresh basil.
