Ingredients
Chicken Cutlets
- 4 thin-sliced chicken breasts or cutlets
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt & pepper, to taste
Tomato Basil Sauce
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil leaves, chopped
- Salt & black pepper, to taste
Creamy Burrata Finish
- 1 burrata ball (about 4 oz), gently torn
- Drizzle of extra virgin olive oil
- Fresh basil, for garnish
Instructions
1. Prepare the Chicken Cutlets
- Lightly season chicken on both sides with salt and pepper.
- Dredge each piece in flour, shaking off excess.
- Dip into beaten eggs.
- Coat with breadcrumbs mixed with Parmesan.
- Heat olive oil in a skillet over medium heat.
- Cook chicken 3–4 minutes per side, until golden, crisp, and cooked through.
- Transfer to a plate and keep warm.
2. Make the Tomato Basil Sauce
- In the same skillet, add 1 tbsp olive oil.
- Sauté minced garlic for 30 seconds until fragrant.
- Add cherry tomatoes and red pepper flakes.
- Cook 5–7 minutes, stirring, until tomatoes break down and release juices.
- Stir in fresh basil, salt, and pepper.
- Simmer 1–2 minutes until slightly thickened.
3. Assemble the Dish
- Nestle the crispy chicken cutlets directly on top of the tomato sauce.
- Spoon some of the tomato mixture over each cutlet.
- Tear burrata over the warm chicken so it melts slightly.
- Finish with a drizzle of extra virgin olive oil and more fresh basil.
