Creamy, low carb, meal prep easy.

Ingredients

• 3 cups broccoli florets

• 3 cups cauliflower florets

• 1 cup low fat cottage cheese, blended

• 3 eggs

• 1 cup shredded cheddar or mozzarella

• 1/4 cup grated Parmesan

• 1 tsp garlic powder · 1/2 tsp onion powder

• 1/2 tsp dried thyme or Italian seasoning

• 1/2 tsp salt · black pepper

• Optional: 2/3 cup cooked diced turkey or chicken

How to Make it

Heat oven to 400°F/200°C; grease a 9×9 dish.

Steam broccoli and cauliflower 3–4 min, pat dry. Whisk cottage cheese, eggs, spices, salt, pepper. Fold in veggies and half the cheese. Pour into dish, top with remaining cheese and Parmesan. Bake 25–30 min until set and golden; rest 10 min. (Broil 1–2 min to brown.)
