This Cheesy Chicken, Broccoli & Cherry Tomato Casserole is everything!
Creamy, cheesy, protein-packed — and totally husband-approved!

Here’s the recipe:
Ingredients:
2 cups shredded rotisserie chicken (skin removed)
2 cups broccoli florets, lightly steamed or blanched
1 cup shredded cheddar cheese (plus extra for topping)
1 cup Greek yogurt
1/4 cup of milk
1/2 cup cherry tomatoes, halved
4 slices crispy bacon, crumbled
1–2 jalapeños, sliced thinly (adjust to taste)
Salt and pepper to taste
1/4 tsp garlic powder
1/4 tsp onion powder
Optional: chopped green onions for garnish
Instructions:
Preheat oven to 375°F
In a baking dish, layer broccoli, chicken, spices & cherry tomatoes
In a bowl, mix cheddar cheese, Greek yogurt and a splash of milk — pour over casserole
Top with bacon & jalapeños
Bake 20 mins, or until bubbly
Garnish with green onions if desired & enjoy warm!
