Keto Crispy Reuben Roll-Ups are a low-carb twist on the classic sandwich. Rolled with Swiss cheese and sauerkraut inside pastrami or corned beef, they’re oven-baked or skillet-seared until crispy.

- 8Â slices corned beef or pastrami
- 8Â slices Swiss cheese
- 1 cup sauerkraut, drained and squeezed
- Optional: sugar-free Russian dressing for dipping

- Instructions
- 1. Preheat oven to 375°F or heat skillet over medium heat.
- 2. Drain and dry sauerkraut using paper towels.
- 3. Lay corned beef slice flat, top with cheese and sauerkraut.
- 4. Roll tightly and place seam-side down on baking sheet or skillet.
- 5. Bake 10–12 mins or pan-sear until crisp and golden.
- 6. Serve warm with dipping sauce or mustard.
