1 cup cottage cheese
3 large eggs
1/2 cup almond flour
1/3 cup honey or maple syrup
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract

Instructions:
Preheat oven to 350°F (175°C) and lightly grease or line a small cake pan.
Add cottage cheese, eggs, honey, lemon juice, lemon zest, and vanilla to a blender.
Blend until smooth and creamy.
Pour the mixture into a bowl and stir in almond flour, baking powder, and salt.
Mix until fully combined.
Pour batter into the prepared cake pan and smooth the top.
