Fluffy Cottage Cheese Blueberry Cloud Bread – Light & High-Protein!

A soft, airy bread alternative with a hint of natural sweetness.

Ingredients:

• 3 large eggs (separated)

• 1/2 cup cottage cheese (blended smooth)

• 1/4 tsp cream of tartar

• 1–2 tbsp sweetener (optional)

• 1/2 tsp vanilla extract

• 1/4 cup blueberries (fresh or small frozen)

Instructions:

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

In a clean bowl, beat egg whites with cream of tartar until stiff peaks form.

In another bowl, mix egg yolks with blended cottage cheese, sweetener, and vanilla until smooth.

Gently fold egg whites into the yolk mixture in batches (keep it light and airy).

Carefully fold in blueberries (don’t overmix to avoid breaking them).

Spoon into small rounds on the baking sheet.

Bake for 25–30 minutes until lightly golden and set.

Let cool completely—they firm up as they cool.
