1 lb corned beef, chopped or shredded
1 ½ cups sauerkraut, drained well
1 cup shredded Swiss cheese
½ cup shredded mozzarella (for extra melt)
½ cup full-fat mayonnaise
¼ cup sugar-free ketchup
1 tbsp Dijon or yellow mustard
1 tsp caraway seeds (optional, for rye flavor)
Salt & pepper to taste
Instructions:
Step 1: Preheat Oven
Set oven to 375°F (190°C). Grease an 8×8-inch baking dish.
Step 2: Mix Dressing
In a bowl, whisk together mayo, ketchup, mustard, and caraway seeds.
Step 3: Layer Casserole
Layer chopped corned beef in the dish. Top with sauerkraut, then pour dressing evenly over the top. Sprinkle with Swiss and mozzarella cheese.
Step 4: Bake
