Ingredients
• 1 cup cottage cheese
• 2 tbsp fresh lemon juice
• 1 tsp lemon zest
• 1–2 tbsp powdered low-carb sweetener (to taste)
• 1/2 tsp vanilla extract
• 2 tbsp heavy cream or unsweetened almond milk
Instructions
Add cottage cheese, lemon juice, lemon zest, sweetener, vanilla, and cream to a blender.
Blend until completely smooth and fluffy.
Taste and adjust sweetness if needed.
Chill for 20–30 minutes for best texture.
Serve cold.
