Ingredients (serves approx 4)
- 300 g fat-free Greek yoghurt (or similar low-fat natural yoghurt)
- 150 g low-fat fromage frais or light cream cheese alternative
- 2 tbsp sweetener granules (or to taste)
- 1 lemon – zest + juice
- 1 tsp vanilla extract
- 8-10 whole-grain ladyfingers (or light sponge fingers)
- 150 ml decaffeinated lemon cordial or very weak cold lemon syrup (or lemon juice diluted)
- Optional: fresh berries or sliced lemon for garnish
Method
- Prepare the lemon yoghurt cream: In a bowl, mix the Greek yoghurt + light cream cheese until smooth. Add the sweetener, lemon zest, 2 tbsp lemon juice, and vanilla extract — stir to combine evenly.
- Soak the fingers: Pour the lemon cordial or diluted lemon juice into a shallow dish. Briefly dip each ladyfinger/finger sponge in the liquid (just enough to moisten, don’t let it go soggy).
- Layer: In individual glasses or one dish, place a layer of the soaked fingers. Then add a layer of the yoghurt cream. Repeat (finger layer → cream layer) until you finish ingredients, ending with a cream layer.
- Chill: Cover and refrigerate for at least 1-2 hours (or overnight for better flavour).
- Finish & drizzle: Before serving, drizzle the remaining lemon juice (or a spoonful of lemon drizzle made from sweetener + lemon juice) over the top and garnish with extra lemon zest or berries.
- Serve: Enjoy chilled. Each portion is light, tangy and gives you a dessert feel with a lemon-drizzle twist.
Notes / Adaptation for Slimming World style
- Using fat-free yoghurt + light cream cheese keeps the fat and calories lower (better for slimming-friendly).
- Ladyfingers/sponges can be swapped for a lighter alternative or even crumbled low-syn biscuits if your plan allows.
- The “drizzle” can simply be a squeeze of fresh lemon juice + a sprinkle of sweetener rather than sugar syrup.
- Portion control is helpful: serving in small glasses makes it feel like a treat without overdoing the volume.
- You could label it a “Hi-Fi” style dessert by emphasising the yoghurt base (Hi-Fi yoghurts are high-protein, low-fat) — if you have access to one, swap in the high-protein yoghurt for extra fullness.
