Maple Roasted Sweet Potatoes with Walnuts
Ingredients:
2 large sweet potatoes, peeled and diced
1/4 cup maple syrup
1/4 cup walnuts, chopped
2 tbsp olive oil
1 tsp dried thyme
Salt and pepper, to taste
Instructions:
Preheat oven to 400°F (200°C).
In a large bowl, combine sweet potatoes, olive oil, maple syrup, thyme, salt, and pepper.
Fold in walnuts until evenly coated.
Spread mixture on a baking sheet in a single layer.
Roast 25–30 minutes, stirring halfway, until tender and lightly caramelized.
Serve warm.
