Ingredients
For the Bake:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1 small red onion, sliced
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil (or Italian seasoning)
- ½ tsp paprika
- Salt & black pepper, to taste
Toppings (optional but recommended):
- ¼ cup crumbled feta cheese
- 2 tbsp chopped fresh parsley or basil
- Lemon wedges for serving
Instructions
1. Preheat Oven
Set oven to 400°F (200°C).
2. Prepare the Chicken & Veggies
- In a large bowl, combine chicken pieces, zucchini, cherry tomatoes, onion, bell pepper, and garlic.
- Drizzle with olive oil.
- Season with oregano, basil, paprika, salt, and pepper.
- Toss everything until evenly coated.
3. Bake
- Spread mixture evenly in a baking dish.
- Bake for 22–28 minutes, or until chicken is cooked through and vegetables are tender.
- Optional: Broil for 2–3 minutes for extra caramelization.
4. Finish & Serve
- Sprinkle with feta and fresh herbs.
- Serve with a squeeze of lemon for brightness.
- Enjoy on its own or pair with rice, quinoa, couscous, or crusty bread.
Variations
- Add olives for more Mediterranean flavor.
- Swap chicken for shrimp (reduce bake time).
- Add potatoes for a heartier version.
- Stir in spinach during last 5 minutes for extra greens.
