- 2 zucchini, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, sliced
- 1 tbsp olive oil
For Topping
- ⅓ cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
For Dressing
- 2 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp oregano
- Pinch salt & pepper
Step-by-Step Instructions
1. Cook the Beef
- Heat a pan over medium heat
- Add ground beef
- Season with salt, pepper, garlic powder, and Italian seasoning
- Cook until browned and fully cooked
- Drain excess grease
2. Cook the Vegetables
- In the same pan, add olive oil
- Sauté zucchini and red onion for 4–5 minutes
- Cook until slightly tender but still crisp
3. Prepare Dressing
In a small bowl, mix:
- Olive oil
- Lemon juice
- Oregano
- Salt & pepper
4. Assemble
