Ingredients:
2 cups cornbread mix
1 cup shredded cheddar cheese
1 lb ground beef
6 slices bacon, cooked and crumbled
½ cup diced onions
½ cup diced pickles
½ cup ketchup
½ cup mustard
2 large eggs
1 cup milk
1 tsp garlic powder
1 tsp black pepper
1 tsp salt
Instructions:
Preheat Oven: To 375°F (190°C) and grease a muffin tin.
Cook Beef: In a skillet, brown the ground beef with onions until fully cooked. Drain excess fat.
Mix Cornbread Batter: In a bowl, combine cornbread mix, eggs, milk, garlic powder, salt, and pepper until smooth.
Add Cheese & Bacon: Fold in shredded cheddar cheese and crumbled bacon into the cornbread batter.
Fill Muffin Tins: Pour a spoonful of cornbread batter into each muffin cup, add a spoonful of the beef mixture, followed by a layer of pickles, ketchup, and mustard, then top with more cornbread batter.
Bake: Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
Cool & Serve: Allow to cool slightly before removing from the tin. Serve warm for a delicious, loaded treat!
