Quick Description

A creamy, lightly sweet no-bake dessert filled with colorful dried fruits and crunchy nuts. It’s sliceable like a cake but melts like ice cream. Perfect for holidays, tea time, or make-ahead desserts.

Ingredients

Cream Base

  • 1Β½ cups heavy whipping cream (cold)
  • 8 oz (225g) cream cheese, softened
  • Β½ cup powdered sugar
  • 1 tsp vanilla extract
  • ΒΌ cup sweetened condensed milk (optional, for extra richness)

Fruit & Nut Mix

  • Β½ cup dried cranberries
  • Β½ cup chopped dried apricots
  • Β½ cup mixed nuts (cashews, almonds, pistachios)
  • 2 tbsp raisins (optional)
  • 1 tbsp shredded coconut (optional)

Instructions

1️⃣ Prepare the Filling

Chop dried fruits and nuts into small bite-size pieces.


2️⃣ Make the Cream Mixture

  1. In a bowl, beat cream cheese until smooth.
  2. Add powdered sugar, vanilla, and condensed milk. Beat until creamy.
  3. In a separate bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture.

3️⃣ Combine

Fold in the chopped fruits and nuts until evenly distributed.


4️⃣ Shape the Log

  1. Lay plastic wrap on the counter.
  2. Spoon mixture into the center and shape into a tight log.
  3. Roll firmly and twist ends to secure.
  4. Refrigerate at least 4–6 hours (overnight for best slicing).

5️⃣ Slice & Serve

Unwrap and slice into thick rounds.
Serve chilled.


Storage

  • Refrigerate up to 5 days
  • Freeze up to 1 month (slice slightly frozen for clean cuts)
