Servings & Timing
- Servings: 8–10 bars
- Prep Time: 10 minutes
- Chill Time: 30–60 minutes
- Total Time: 40–70 minutes
Ingredients List
- 1 ½ cups chocolate chips (dairy-free or sugar-free if preferred)
- ½ cup peanut butter (natural or smooth)
- 2 cups puffed rice or rice cereal (for crunch)
- 1 tablespoon honey or maple syrup (optional, for sweetness)
Instructions
Step 1: Melt the Chocolate and Peanut Butter
In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and the mixture is smooth. If you like it sweeter, add a tablespoon of honey or maple syrup to the mix and stir until fully incorporated.
Step 2: Mix in the Crunch
Add the puffed rice or rice cereal to the melted chocolate-peanut butter mixture. Stir gently until all the cereal is coated with the chocolate mixture. Make sure the cereal is well combined but be careful not to crush the puffed rice.
Step 3: Press into a Pan
Transfer the mixture to an 8×8-inch (20×20 cm) baking dish lined with parchment paper. Press the mixture evenly into the dish, packing it down slightly to ensure the bars hold together when cut.
Step 4: Chill to Set
Refrigerate the mixture for at least 30–60 minutes, or until it firms up and becomes solid. If you’re in a hurry, you can freeze the bars for about 20–30 minutes for quicker results.
Step 5: Slice and Serve
Once the bars are firm and set, remove from the refrigerator and cut into squares or rectangles. Serve chilled or at room temperature.
Additional Notes
- Make It Vegan: Use dairy-free chocolate chips and maple syrup (instead of honey) for a completely vegan version.
- Sweetness Adjustment: If you prefer a sweeter crunch bar, feel free to add a little more honey, maple syrup, or powdered sweetener to the mixture.
- Add-Ins: You can mix in extras like chopped nuts, dried fruit, or even a pinch of sea salt for a salty-sweet contrast.
Dietary Info
- Low-Carb Option: To make these bars keto-friendly, swap out the puffed rice for unsweetened shredded coconut or low-carb cereal.
- High in Healthy Fats: The peanut butter and chocolate chips provide a good source of healthy fats.
- Gluten-Free: Using puffed rice or gluten-free rice cereal makes this treat naturally gluten-free.
