Ingredients
- 1 cup (100 g) oatmeal
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- Pinch of salt
- 3 tablespoons raisins, rinsed in hot water
- 10–12 pieces dried apricots, rinsed in hot water and chopped
- 1 egg
- 1 medium apple, peeled and grated
- 3 tablespoons plain yogurt (or milk of choice)
- 1 teaspoon vanilla extract
- Optional: a few chopped nuts (walnuts or almonds)
Instructions
1. Prepare the Dry Ingredients
- In a bowl, combine oatmeal, cinnamon, baking powder, and salt.
- Stir in raisins and chopped dried apricots.
2. Prepare the Wet Ingredients
- In another bowl, beat the egg lightly.
- Add grated apple, yogurt, and vanilla extract, mixing until combined.
3. Combine
- Pour the wet mixture into the dry ingredients and mix until well combined.
- Optional: fold in a few chopped nuts for extra texture.
4. Cook in a Mug
- Lightly grease a large microwave-safe mug or small bowl.
- Pour the batter into the mug, filling it no more than 3/4 full.
- Microwave on high for 2–3 minutes, checking at 2 minutes. The top should be set and a toothpick inserted in the center should come out clean.
5. Serve
- Let the mug cake cool 1–2 minutes before eating.
- Optional: top with a spoonful of yogurt, a sprinkle of cinnamon, or a few extra raisins.
💡 Tips:
- If using larger oats, soak them in milk or water for 5–10 minutes before mixing for a softer texture.
- This mug cake can also be baked in a small ramekin at 180°C (350°F) for 15–20 minutes.
- For extra sweetness without sugar, you can add a mashed ripe banana or unsweetened applesauce.
