Ingredients:
- 1 lb (450g) boneless chicken breast, sliced
- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tsp fajita seasoning (or taco seasoning)
- 3 cups chicken broth
- 8 oz (about 2½ cups) uncooked penne or rotini pasta
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar or Mexican blend cheese
- Salt & pepper to taste

Instructions:
- In a large pot or skillet, heat olive oil over medium-high heat.
- Add chicken, season with salt, pepper, and half the fajita seasoning. Cook until browned and mostly cooked through. Remove and set aside.
- In the same pot, add a bit more oil if needed and sauté the onions and peppers with the remaining seasoning until tender.
- Return the chicken to the pot, add pasta and chicken broth. Stir to combine.
