Chile Verde
Sauce:
15-20 tomatillos
2 serano peppers
5 cloves of garlic
1/2 onion quartered
Cilantro
1 1/2 lbs Pork cubed
Sprinkle of cornstarch and flour
Salt
Pepper
Preseason pork let it sit while you get the veggies all prepped and in the oven to make the sauce. Broil veggies till seared.
Put seared veggies in the blender to make the Verde Sauce and set aside.
Now sear the pork in batches was 4 separate batches for me so they get a better sear. Donāt crowd the pan. Once last batch of pork is browned add the Verde Sauce cook low and slow till pork is fork tender.
