Light, crunchy, and airy — this batter fries up beautifully golden every time!
🛒 Ingredients:
- 3/4 cup all-purpose (plain) flour
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup ice-cold water
🔥 Instructions:
1️⃣ Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.
2️⃣ Add the Water:
- Gradually pour in the ice-cold water while stirring.
- Mix just until combined — it’s okay if the batter is a little lumpy! (Overmixing can make it less crispy.)
3️⃣ Ready to Use:
- Dip your ingredients (like vegetables, chicken strips, shrimp, etc.) into the batter, letting any excess drip off.
4️⃣ Fry:
- Carefully place battered items into hot oil (around 350°F / 175°C).
- Fry until golden brown and crispy, about 2–4 minutes depending on the size of your pieces.
- Drain on a paper towel-lined plate.
🍴 Tips for Best Results:
- Use ICE-COLD water — it’s key to a crisp, light texture.
- Fry right away after mixing for best results.
- Do not overcrowd the pan; fry in small batches to keep the oil hot and the batter crispy.
- Optional: For extra crunch, you can double-dip — lightly coat the food with flour before dipping into the batter.
