Thought I Had Found the Best High-Protein Hot Dog Buns… Until I Read the Label

Today just wanted to share a story of mine…

When I first started focusing on a high-protein diet, I was thrilled to find store-bought high-protein hot dog buns from brands like Sola Bakery and Dave’s Killer Bread.

But then… I took a bite. And, well—reality hit hard.

📌 The texture? Either way too dry or weirdly spongy.
📌 The taste? That unmistakable artificial aftertaste that just lingers.
📌 The ingredients? A laundry list of preservatives, fillers, and who-knows-what-else.

Why You Should Rethink Store-Bought High-Protein Buns

Let’s be real—just because something is labeled “high-protein” doesn’t mean it’s actually good for you. Many store-bought high-protein hot dog buns are packed with preservatives, fillers, and hidden carbs that defeat the purpose of eating clean.

And let’s talk cost. A pack of store-bought protein buns can set you back $6-$10, but when you bake at home, you’re investing in quality ingredients that last longer and cost less per serving. Plus, homemade buns freeze beautifully, so you always have a fresh, healthy option on hand.

This isn’t just about buns—it’s about taking control of what you put in your body. When you go homemade, you’re choosing better nutrition, better taste and a smarter way to fuel your health goals.

I realized and at that moment, I knew—if I wanted a high-protein bun that was soft, chewy, golden-brown, and actually satisfying—I had to make it myself.

Being a chef, my whole focus was to create a recipe in which we shouldn’t have to sacrifice texture or flavor just to hit our protein goals.

But after multiple failed batches, I almost gave up

This failure was not acceptable. So, gave another try. This time I examined and did a new thing…

The Secret Ingredient That Changed Everything!

I tried everything—almond flour, coconut flour, psyllium husk, xanthan gum—but nothing gave me the fluffy texture I wanted. Every recipe was either too dense, too crumbly, or just plain disappointing.

Then, late one night, after another failed attempt, I thought…

What if I melted mozzarella cheese into the dough?

What you think? Would have worked?

It sounded crazy, but I was desperate. So, I grabbed low-moisture shredded mozzarella, melted it with cream cheese, and folded it into the flour mixture.

The result? (Ahhh…) Pure magic.

Soft, chewy, and everything I had been searching for.

So, lets dive in to my amzing high protein hot dog buns recipe…..

Ingredients

High-Protein Hot Dog Buns
 A glass bowl with keto-friendly ingredients—almond flour, coconut flour, mozzarella, cream cheese, baking powder, and eggs—on a rustic wooden counter with natural lighting.
  • 2 teaspoons yeast
  • 2 tablespoons sugar
  • 1 cup milk warm
  • 2¾ cups flour
  • ½ tsp Salt
  • 2 eggs
  • 3 Tbsp butter Melted

Instructions

1- Mix the yeast, 1 teaspoon sugar, and warm milk and leave to proof—about 5 minutes.

2- Combine two and a half cups of flour, the remaining sugar, and salt. Mix well.

3- Add the proofed yeast, one egg, and melted butter, and use a sturdy spoon to mix until everything comes together in a rough, shaggy mass of dough.

4- Cover with a plastic wrap or a tight-fitting lid and leave to rest for five minutes.

5- Remove the lid, turn the dough to a lightly floured work surface and knead, gradually adding the leftover quarter cup of flour – your dough will still be soft, but don’t be tempted to add more flour.

6- Return the dough to the bowl and grease the surface with a bit of oil or melted butter, cover with a plastic wrap or a tight-fitting lid, and leave to rest for 30 minutes.

7- Punch down the dough to remove any trapped air and transfer it back to a lightly floured work surface.

8- Divide the dough into eight pieces, roll each out about 6 inches long, and pinch down the sides and ends.

9- Place the buns, seam-side down, on a parchment-lined baking sheet.

10- Make the egg wash by whisking one egg, then brush the buns with the egg wash.

11- Cover the loaves and leave them to rise for 15minutes. They should become nicely puffy.

12- Place in a 350F preheated oven and bake for 12 to 15 minutes.
