Ingredients:

For the Rolls:

  • 8 rice paper wrappers
  • 1/2 cup shredded red cabbage
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 avocado, sliced thin
  • Fresh mint leaves
  • Fresh cilantro leaves

  • 1/4 cup peanut butter (smooth or chunky)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon lime juice (freshly squeezed)

  • In a small bowl, whisk together the peanut butter, soy sauce, lime juice, and maple syrup.
  • Add a splash of warm water as needed to thin it out to a smooth, dippable consistency.
  • Set aside.

2️⃣ Prepare the Veggies:

  • Wash and cut all your vegetables: shred the cabbage, julienne the carrot and cucumber, and slice the avocado thinly.
  • Pick fresh mint and cilantro leaves off the stems.

3️⃣ Assemble the Rolls:

  • Fill a shallow dish (like a large plate or pie dish) with warm water.
  • Dip one rice paper wrapper into the warm water for about 5–10 seconds until just pliable (it will continue to soften as you work).
  • Lay the softened wrapper flat on a clean surface.
