Rustic No-Knead Rosemary Garlic Bread

Ingredients:

  • 3 cups all-purpose flour
  • 3 cloves garlic, minced
  • 1 ½ teaspoons salt
  • 1 teaspoon active dry yeast
  • 1 ½ cups warm water (about 110°F or 45°C)
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon olive oil (plus a little more for brushing)

🔥 Instructions:

1️⃣ Mix the Dough:

  • In a large mixing bowl, whisk together the flour, salt, and yeast.
  • Stir in the minced garlic and chopped rosemary.
  • Add the warm water and olive oil.
  • Mix with a wooden spoon until a shaggy dough forms. (No kneading necessary!)

2️⃣ First Rise:

  • Cover the bowl tightly with plastic wrap or a clean kitchen towel.
  • Let it sit at room temperature for 12–18 hours (overnight is best) until the dough is doubled in size, bubbly, and jiggly.

3️⃣ Shape the Dough:

  • Lightly flour a surface and gently turn the dough out onto it.
  • Fold the dough over itself a couple of times to form a rough ball. (It will be sticky — that’s good!)
  • Place the dough seam-side down onto a sheet of parchment paper.

4️⃣ Second Rise:

  • Cover the dough loosely with a towel and let it rest for 30–45 minutes while the oven preheats.

5️⃣ Preheat the Oven:

  • Place a Dutch oven (or heavy oven-safe pot with a lid) into the oven and preheat to 450°F (230°C).
  • Let the pot heat for at least 30 minutes.

6️⃣ Bake:

  • Carefully remove the hot Dutch oven from the oven.
  • Lift the dough (on the parchment paper) and carefully place it inside the Dutch oven.
  • Cover with the lid and bake for 30 minutes.
  • Remove the lid and bake for another 10–15 minutes, until the bread is golden brown and crispy.

7️⃣ Cool:

  • Remove the bread from the pot and let it cool on a wire rack for at least 20 minutes before slicing.
