Ingredients
- 1 pre-made pie crust
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- ½ cup shredded mozzarella cheese
- 3 large eggs
- ½ cup milk or cream
- ¼ cup grated Parmesan (optional but recommended)
- 1 clove garlic, minced (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp nutmeg (optional — amazing with spinach!)
Instructions
1. Preheat Oven
Set oven to 375°F (190°C).
2. Prep the Crust
Place the pie crust in a pie dish.
Prick the bottom with a fork.
Optional for crisp crust:
Blind bake for 8–10 minutes.
3. Make the Filling
In a bowl, whisk together:
- eggs
- milk/cream
- ricotta
- salt
- pepper
- garlic (optional)
- nutmeg (optional)
Stir in:
- chopped spinach
- mozzarella
- Parmesan (if using)
4. Assemble
Pour the filling into the pie crust and spread evenly.
5. Bake
Bake for 35–40 minutes, or until the center is set and the top is lightly golden.
Let cool 5–10 minutes before slicing.

- Enjoy warm or at room temperature.
- Serve with a fresh green salad or roasted veggies.
