Ingredients (3–4 servings)
- 1½ lb (680 g) chicken breast or thighs
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 zucchini, sliced
Instructions
- Preheat oven to 425°F (220°C).
- Place chicken and vegetables on a large baking sheet.
- Drizzle with olive oil and sprinkle all seasonings evenly.
- Toss to coat and spread in a single layer.
- Bake for 20–25 minutes, flipping once, until chicken is cooked through and veggies are roasted.
- Serve hot or store for meal prep.
